There’s no onion dip you can have today that’s as good as Onion Dip Tomorrow.
This is riff on Alton Brown's onion dip. I'm not a big mayo person, so I go for sour cream only. This also incorporates a tip I picked up that any dish with onions can be made better/fancier by using some shallots.
Preheat nonstick skillet with oil and then add onions and shallot. Stir occasionally, cooking until onions are deep golden brown. Allow to cool for 10-15m.
Put sour cream in a bowl, stir in cooled onions, and place in refrigerator overnight.
Season to taste with salt. Optionally add garlic powder and/or white pepper to taste.
